Building Manager - Recipe Reports

CNCentral offers menu planners and kitchen staff (DA and BA users) the ability to print recipe reports in a standard format for use in the kitchen in a recipes binder or on an as needed basis. There are two areas in CNCentral where staff can go to print recipe reports, the Recipes Database and the Production Module. The report varies slightly depending on where the report is pulled from. Below is a description of the report as pulled from each area and directions for accessing each:

Recipes Database > Recipes Report:

CNCentral allows District Admins (DA’s) and Building Admins (BA’s) the ability to run recipes reports which can be printed and kept onsite in a binder for all to access or printed as needed. This report offers you the option to scale the recipe for the planned number of servings before running the recipe report. So, if you are expecting to serve 260 servings of a recipe, you can enter that in and CNCentral will scale the recipe to that exact number and provide you with the exact quantities needed to prepare this recipe for this particular day. It will even provide inventory information in the report which will assist you in pulling the necessary product to produce the recipe in the quantity entered.

To pull a Recipe Report from the Recipes Database:

  1. Navigate to the Recipes Database from the black panel on the left side of the screen. Create a recipe or locate and click on an existing recipe
  2. From within the recipe detail page, click on the report icon on the top right side of your screen (mceclip0.png)
  3. Enter the yield or the number you’d like to scale the recipe to
  4. Click the View Report button
  5. Click the disc icon to select a file format to download this report to for printing

Production Records Module > Recipe Reports:

CNCentral allows District Admins (DA’s) and Building Admins (BA’s) the ability to run recipes reports from the production records module. This report when run from the production records module offers you the ability to print all of the recipes found on a daily menu with a single action in the planned quantities. This report will automatically apply the planned number of servings for each recipe and scale the recipes to the exact planned numbers for the week. If you want to print all of the recipes on the menu that you’ll need to prepare for the day, you can go to the production records module and with the click of a button, access all of the recipes needed for a meal session on a particular day and skip the math of scaling the recipes to the quantities needed to prepare them.

To pull a Recipe Report from the Production Module:

  1. Make sure you have a daily menu with at least 1 recipe on the menu for the day
  2. Go to the production record for that menu either by going straight to the production records module and locating it, or by clicking on the weekly menu and clicking the “View PR” button (both take you to the same place but I prefer to get there using the “View PR” button)
  3. Click on the report icon on the top right side of your screen (mceclip0.png) and select “Recipe Reports” from the options
  4. Choose the day of the week you’d like to view recipe reports for, then click the View Reports button
  5. Scroll through the different recipes using the arrow keys or click the disc icon to download to work or PDF for printing
